Scallions, also known as green onions, are young onions harvested before a full bulb develops, giving them a mild, sweet onion flavor and crisp texture. They are a versatile culinary staple used both raw and cooked to add fresh flavor, color, and aroma to many dishes.

  • White & Light Green Parts:
    Sharper, more traditional onion flavor with a crisp texture. Best for sautéing, stir-fries, soups, sauces, and compound butters.
  • Dark Green Tops:
    Mild, tender, and fresh tasting. Perfect as a garnish for salads, tacos, eggs, ramen, baked potatoes, and more.

As scallions continue to grow, they develop into larger forms with deeper flavor and different culinary uses:

  • Scallions / Green Onions:
    Young and slender with little to no bulb. Mild, sweet, and tender.
  • Spring Onions:
    More mature with a small rounded white bulb at the base while still retaining a fresh, delicate flavor.
  • Mexican Onions (Cebollitas):
    Slightly larger with a developing bulb and sturdier texture. Excellent for grilling and high-heat cooking.
  • Jumbo Scallions / Dae-pa:
    Large Asian-style scallions resembling thin leeks with hollow green leaves. Known for their rich, sweet flavor in soups, stews, and braised dishes.
